CHEF’S ADVICE
If you catch, are gifted or purchase live lobster you MUST drown them first so they die. You can do this by placing them in freshwater for 30 minutes.
STEPS
- Split the lobsters lengthways down the middle to give two halves
- Remove any dirt from the head and rinse
- Smother the flesh in your oil of choice
- Place the lobster flesh-side-down onto a hot BBQ plate
- Allow the lobster to cook for approximately one minute, then turn over using a spatula
- Add your chosen tastings for example wine, garlic butter, curry powder etc to the lobster
- Cover the lobster with foil and cook for a further 15 minutes, or until the meat is opaque
- Serve with lemon
