CHEF’S ADVICE
If you catch, are gifted or purchase live lobster you MUST drown them first so they die. You can do this by placing them in freshwater for 30 minutes.
STEPS
- Bring your cooking water to the boil and add 2 cups of salt
- Add your lobster to the water
- When the water returns to the boil, cook the lobster according to weight – For 500g, boil for 18 minutes. For every 100g extra, cook for a further two minutes
- Remove the lobster and place it in ice cold water to stop the cooking process
